Researcher interests: Bacteriocins: Molecular characterization of regulating elements involved in bacteriocins production in lactic acid bacteria. Using bacteriocins in food systems for shelf life extension and controlling pathogens. Studying bacteriocin mode of action through molecular characterization of resistant mutants. A molecular genetics approach to study natural antimicrobial compounds: genetic and molecular analysis of the mechanisms governing food borne bacteria response to defined natural antibacterial components of plants origin. Mycotoxin detoxification: (1) Isolation of micro-organisms capable of detoxification of mycotoxins. (2) Genetically modified probiotic bacteria expressing detoxification enzymes. (3) Mycotoxin detoxification by absorption.
